Pork Preparation

    Marinate the Pork

    In a bowl, combine the minced garlic, olive oil, salt, and black pepper. Rub this mixture all over the pork tenderloin. Allow it to marinate for at least 30 minutes, preferably in the refrigerator.

    Sear the Pork

    Heat a skillet over medium-high heat. Add a little olive oil and sear the marinated pork tenderloin on all sides until browned, about 3-4 minutes per side.

    Bake the Pork

    Transfer the seared pork to a preheated oven at 180°C (350°F) and bake for 20-25 minutes, or until the internal temperature reaches 65°C (145°F).

    Toast the Seeds

    In a dry skillet over medium heat, toast the pumpkin seeds, sunflower seeds, and sesame seeds for 3-5 minutes, stirring frequently, until they are golden and fragrant.

    Once toasted, remove from heat and stir in paprika and cumin. Mix well to ensure all seeds are evenly coated.

Assembly and Serving

    Once the pork is done, let it rest for 5 minutes before slicing. Serve sliced pork on a platter, topped with the seed mixture. Garnish with chopped parsley and lemon wedges if desired.
