Cooking Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

    Add the penne pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.

    Once cooked, drain the pasta and reserve about 1/2 cup of the pasta water. Set pasta aside.

    While the pasta is cooking, chop the cherry tomatoes, red bell pepper, zucchini, and red onion into bite-sized pieces. Mince the garlic cloves.

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped red onion and garlic and sauté until the onion is translucent, about 3-4 minutes.

    Add the chopped zucchini, red bell pepper, and cherry tomatoes to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

    Add the drained penne pasta to the skillet with the sautéed vegetables. Stir to combine.

    Add dried oregano, dried basil, crushed red pepper flakes, and balsamic vinegar. Toss everything together, adding reserved pasta water as needed to create a light sauce.
