Method
Preparation of Chicken
- 1
Season and Sear Chicken
Season the chicken breasts with salt and black pepper on both sides. In a large skillet, heat the olive oil and butter over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
Cooking Asparagus
- 2
Prepare Asparagus
In a large pot, bring the water and salt to a boil. Add the asparagus spears and cook for 3-4 minutes until they are bright green and tender-crisp. Drain and set aside.
Preparing Crab Topping
- 3
Mix Crab Topping
In a bowl, combine the lump crab meat, mayonnaise, Dijon mustard, lemon juice, and paprika. Gently fold together to combine, being careful not to break up the crab meat too much. Set aside.
Making Sauce
- 4
Prepare the Sauce
In the same skillet used for the chicken, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine and let it simmer for 2-3 minutes, then add the heavy cream. Allow the sauce to thicken slightly, then stir in the chopped parsley.
Assembly
- 5
Plate the Dish
On a serving plate, layer the asparagus first, then place a piece of chicken on top. Spoon the crab topping over the chicken and finish by drizzling the sauce over the entire dish. Serve immediately.
