Cooking Quinoa

    Rinse the Quinoa

    Place the quinoa in a fine-mesh strainer and rinse under cold water for about 2 minutes to remove its natural coating, called saponin.

    Cook the Quinoa

    In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and all the broth is absorbed.

Preparing the Vegetables

    Chop the Vegetables

    Dice the bell peppers, slice the zucchini, and halve the cherry tomatoes.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the chopped bell peppers and zucchini, cooking for 5-7 minutes until they begin to soften. Then, add the cherry tomatoes and spinach, cooking until the spinach wilts.

Combining Ingredients

    Add Chickpeas and Quinoa

    Stir in the rinsed chickpeas and cooked quinoa into the vegetable mixture. Add cumin, paprika, salt, and black pepper. Mix well and cook for another 5 minutes to heat through.

Serving

    Remove from heat and stir in fresh parsley and lemon juice. Serve warm as a main dish or side.
