Shrimp PoBoy Preparation

Prepare the Shrimp
In a medium bowl, combine the buttermilk and Cajun seasoning. Add the shrimp and marinate for at least 30 minutes.

Set up the Breading Station
In one bowl, add the cornmeal, and in another bowl, add the all-purpose flour. Mix in additional Cajun seasoning to the flour if desired.

Bread the Shrimp
Remove shrimp from the marinade and let excess buttermilk drip off. Dredge the shrimp first in the cornmeal, then in the flour, ensuring they are well coated.

Fry the Shrimp
Heat vegetable oil in a large skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the PoBoy
Slice the French bread or hoagie rolls in half. Layer with shredded lettuce, sliced tomatoes, fried shrimp, pickles, and drizzle with hot sauce to taste.
