Marinate the Chicken
In a large bowl, combine the buttermilk and half of the Cajun seasoning. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Coating
In a shallow dish, mix together the flour, cornmeal, remaining Cajun seasoning, black pepper, and salt.

Fry the Chicken
Heat the vegetable oil in a deep skillet or fryer over medium-high heat. Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Fry the chicken in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

Assemble the Po'Boy
Slice the French bread in half lengthwise. Spread mayonnaise on both sides. Layer with lettuce, fried chicken, sliced tomatoes, pickles, and drizzle with hot sauce. Close the sandwich and serve immediately.
