    Roast the Beef

    Preheat your oven to 300°F (150°C). Place the beef roast in a roasting pan and season it with salt and black pepper. Roast for approximately 3 to 4 hours, or until the meat is tender and can be easily shredded.

    Make the Debris Gravy

    In a large pot, combine the beef broth, chopped onion, minced garlic, Worcestershire sauce, and bay leaves. Bring the mixture to a simmer. Once the beef is done roasting, remove it from the oven and let it rest for 15 minutes before shredding. Reserve some of the drippings from the roasting pan and add them to the gravy mixture. Stir in the shredded beef and let it simmer for an additional 30 minutes.

    Assemble the Po'Boys

    Slice the French bread or po'boy rolls in half lengthwise. Layer with shredded beef and debris gravy. Top with sliced pickles, shredded lettuce, and tomato slices. Close the sandwich and serve immediately.
