    Wash and peel the potatoes. Using a mandoline slicer or a sharp knife, slice the potatoes into thin, even rounds (about 1/8 inch thick).

    Soak the Slices

    Place the potato slices in a bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps achieve a crispier chip.

    Dry the Potatoes

    Drain the water and lay the potato slices on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Working in batches, carefully add the potato slices to the hot oil. Fry for about 3-4 minutes or until they are golden brown and crispy. Stir occasionally to ensure even cooking.

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, pepper, and paprika to taste.
