Prepare the Onions
Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually stir in the cold sparkling water until the batter is smooth and well combined.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Coat the Onion Rings
Dip each onion ring into the batter, allowing the excess to drip off.

Fry the Onion Rings
Carefully place the coated onion rings into the hot oil and fry in batches until golden brown, about 3-4 minutes. Remove them with a slotted spoon and drain on paper towels.
