    Cook the Sausages

    In a large skillet over medium heat, add olive oil. Once hot, add the Italian sausage links and cook until browned and cooked through, about 10-12 minutes. Remove from skillet and let rest before slicing.

    Sauté the Vegetables

    In the same skillet, add sliced bell pepper, onion, celery, and minced garlic. Cook until vegetables are soft and translucent, about 5-7 minutes. Stir in Cajun seasoning and cook for another minute.

    Assemble the Poboy

    Slice the French bread rolls in half lengthwise. Place a layer of sautéed vegetables on the bottom half of each roll. Add sliced sausage on top, then drizzle with hot sauce to taste.

    Top with shredded lettuce, sliced tomato, and pickles. Close the sandwich and cut in half if desired.
