Directions

  1. 1

    Marinate the Chicken

In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are well coated. Let them marinate for at least 30 minutes.

  2. 2

    Grill the Chicken

Preheat the grill to medium-high. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the grill and let rest for a few minutes before slicing.

  3. 3

    Prepare the Sandwich

Slice the French bread or po'boy rolls lengthwise. Spread mayonnaise on the inside of each piece. Layer the sliced grilled chicken, lettuce, tomato, and pickles inside the bread.

  4. 4

    Add Hot Sauce

Drizzle hot sauce over the fillings according to your taste preference. Close the sandwich and cut in half if desired.

  5. 5

    Serve

Serve the grilled chicken po'boy with extra hot sauce on the side, if desired.
