    Prepare the Ingredients

    Thinly slice the ribeye steak, onion, and bell pepper. Set aside.

    Cook the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell pepper, season with salt and pepper, and sauté until softened and caramelized, about 5-7 minutes. Remove from skillet and set aside.

    Cook the Steak

    In the same skillet, add another tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye steak. Season with salt and pepper, and cook until browned and cooked to your desired doneness, about 3-5 minutes.

    Combine Ingredients

    Return the cooked onions and peppers to the skillet with the steak and mix well. Layer the Swiss cheese on top and cover the skillet until the cheese melts.

    Assemble the Sandwich

    Spread mayonnaise on the inside of each sub roll. Spoon the cheese steak mixture into the rolls and serve immediately.
