Prepare Sam’s Sauce

In a bowl, combine mayonnaise, Dijon mustard, hot sauce, garlic powder, paprika, salt, and black pepper. Mix well and set aside.

Prepare Fish

In a shallow bowl, whisk the eggs. In another bowl, combine cornmeal, flour, salt, and pepper. Dip each fish fillet into the egg mixture, then coat with the cornmeal mixture.

Fry or Grill Fish

Heat oil in a deep pan or grill over medium-high heat. Fry the fish fillets for about 3-4 minutes on each side until golden brown and cooked through, or grill for 4-5 minutes on each side.

Assemble the Po'Boy

Slice the French bread rolls open. Spread a generous amount of Sam’s Sauce on both sides of the bread. Layer with shredded lettuce, sliced tomatoes, pickles, and the fried or grilled fish.

Serve

Close the sandwich and serve immediately, with extra sauce on the side if desired.
