Fried Oysters and Garnishes

Method

Preparation and Assembly

  1. 1

    Prepare the Oysters

In a bowl, soak the fresh oysters in buttermilk for about 30 minutes.

  2. 2

    Make the Coating

In a separate bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper.

  3. 3

    Coat the Oysters

Remove oysters from buttermilk and dredge them in the flour mixture, ensuring they are evenly coated.

  4. 4

    Fry the Oysters

Heat oil in a deep frying pan over medium-high heat. Fry the coated oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

  5. 5

    Prepare the Sandwich

Slice the French bread or Po'Boy rolls in half and lightly toast if desired. Layer the fried oysters, lettuce, sliced tomatoes, and pickles inside the bread.

  6. 6

    Add Sam’s Sauce

Drizzle Sam’s Sauce over the assembled sandwich, close it, and serve immediately.
