Prepare the Filling

    Cook the Rice

    In a medium pot, bring 2 cups of water to a boil. Add 1 cup of long-grain rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed. Set aside to cool.

    Sauté Vegetables

    In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Mix the Filling

    In a large bowl, combine the cooked rice, sautéed onion and garlic, chopped parsley, dill, toasted pine nuts, lemon juice, salt, and black pepper. Mix well until all ingredients are incorporated.

Prepare the Grape Leaves

    Rinse and Prepare Leaves

    If using jarred grape leaves, rinse them under cold water to remove excess brine. Lay the leaves out flat, vein side up, on a clean surface.

Assemble the Dolmades

    Fill the Leaves

    Place a tablespoon of the filling at the base of a grape leaf. Fold the sides over the filling and roll tightly from the base to the tip to form a small cylinder. Repeat with remaining leaves and filling.

Cook the Dolmades

    Prepare the Cooking Liquid

    In a large pot, combine 2 cups of vegetable broth, 1 tablespoon of olive oil, and 1 medium lemon sliced. Bring to a simmer.

    Arrange and Cook

    Place the dolmades seam side down in the pot, ensuring they fit snugly. Cover with a lid and simmer on low heat for about 30-40 minutes, until the leaves are tender and the flavors meld.
