Preparation of Marinade

Make the Marinade

In a small bowl, whisk together olive oil, lemon juice, chopped parsley, chopped thyme, minced garlic, salt, and black pepper until well combined.

Preparing the Bronzino

Marinate the Fish

Place the whole bronzino in a large dish or a resealable bag. Pour the marinade over the fish, ensuring it is well coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes.

Roasting Vegetables

Prepare the Vegetables

Preheat the oven to 425°F (220°C). In a large bowl, combine sliced zucchini, chopped bell peppers, and sliced red onion. Drizzle with olive oil, then sprinkle with salt and black pepper. Toss to coat evenly.

Roast the Vegetables

Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes or until tender and slightly caramelized, stirring halfway through.

Preheat your grill to medium-high heat.

Remove the bronzino from the marinade and let any excess marinade drip off. Place the fish on the grill and cook for about 6-8 minutes on each side or until the flesh is opaque and flakes easily with a fork.
