Prepare the Filling

Cook the Rice
In a medium pot, combine 1 cup of long-grain rice with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until the rice is fully cooked and water is absorbed.

Mix the Filling
In a large bowl, combine the cooked rice, sautéed onion, 1 cup of chopped parsley, 1 tablespoon of chopped dill, 2 tablespoons of lemon juice, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well to combine.
Prepare the Grape Leaves

Rinse the Grape Leaves
If using jarred grape leaves, rinse them under cold water to remove excess salt. If using fresh, blanch them in boiling water for about 2-3 minutes until softened.

Prepare for Wrapping
Lay the grape leaves on a flat surface, vein side up, with the stem end facing you.
Stuff and Roll the Dalmades

Stuff the Leaves
Place about 1 to 2 tablespoons of the rice filling at the base of each grape leaf. Fold in the sides and roll tightly from the base to the tip.

Continue the same process until all the filling is used. Place the rolled leaves seam-side down in a large baking dish.
Cook the Dalmades

Add Cooking Liquid
In a bowl, mix together 2 cups of vegetable broth, 2 tablespoons of olive oil, and 1 teaspoon of salt. Pour this mixture over the rolled grape leaves in the baking dish.

Cover and Bake
Cover the baking dish with foil and bake in a preheated oven at 350°F (175°C) for about 45 minutes.

Remove from the oven and let cool slightly. Serve warm or at room temperature with lemon slices on the side.
