Prepare the filling

    Mix the cheeses

    In a large mixing bowl, crumble the feta cheese and ricotta cheese together until well combined.

    Add eggs

    Crack the eggs into the bowl and mix until smooth and creamy.

    Season the mixture

    Add chopped fresh parsley (if using), salt, and black pepper to the cheese mixture. Stir well to combine all ingredients.

Prepare the pastry

    Preheat oven

    Preheat your oven to 180°C (350°F).

    Prepare the phyllo dough

    Lay out the phyllo sheets on a clean, dry surface. Cover them with a damp cloth to prevent them from drying out.

    Butter the phyllo sheets

    Melt the butter and mix it with olive oil. Brush the melted butter mixture onto one sheet of phyllo dough. Place another sheet on top and brush again. Repeat this process until you have about 5 sheets layered.

    Add filling

    Place a generous amount of the cheese filling along one edge of the layered phyllo sheets.

    Roll the pastry

    Carefully roll the phyllo dough over the filling to create a log shape. Tuck in the edges as you roll to secure the filling inside.

    Place in a baking dish

    Transfer the rolled tiropita to a greased baking dish, seam side down. Brush the top with any remaining butter mixture.

    Bake

    Bake in the preheated oven for about 30-35 minutes or until golden brown and crispy.

    Once baked, remove from the oven and allow to cool for a few minutes. Cut into squares or triangles.
