Appetizer - Samosa

Make the Dough
In a large bowl, combine the all-purpose flour and a pinch of salt. Gradually add water, kneading until a soft dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
Boil the potatoes until tender, then peel and mash them. In a pan, heat a little oil, add cumin seeds, and let them splutter. Add the peas, mashed potatoes, coriander powder, garam masala, and salt. Mix well and cook for 5 minutes. Let the filling cool.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a circle, cut in half, and form a cone. Fill with the potato-pea mixture and seal the edges with water.

In a deep pan, heat oil. Once hot, fry the samosas in batches until golden brown. Drain on paper towels and serve hot.
