Filling Preparation

    Prepare the Spinach

    Wash the fresh spinach thoroughly and chop it coarsely. If using frozen spinach, thaw and drain it well.

    Sauté Onion and Garlic

    In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Combine Filling Ingredients

    Add the chopped spinach to the pan and cook until wilted. Remove from heat and let it cool slightly. In a mixing bowl, combine the spinach mixture with crumbled feta cheese, eggs, dill, salt, and black pepper. Mix well until combined.

    Prepare Phyllo Dough

    Thaw the phyllo dough in the refrigerator overnight. Once ready to use, unroll the phyllo sheets and cover them with a damp cloth to prevent drying out.

    Layer Phyllo Sheets

    Brush a baking dish with melted butter. Place one sheet of phyllo dough in the dish and brush it lightly with melted butter. Repeat this process with 5-6 sheets, layering them on top of each other.

    Fill and Fold

    Spread the spinach filling evenly over the layered phyllo. Fold the sides of the phyllo over the filling and then roll it up tightly from one end to the other.

    Bake the Spanakopita

    Brush the top of the rolled spanakopita with more melted butter. Bake in a preheated oven at 180°C (350°F) for 30-40 minutes or until golden and crispy.
