Preparation of Meat

    Marinate the Meat

    Cut the chicken, pork, steak, and lamb into bite-sized pieces and place them in a bowl. Add olive oil, oregano, paprika, salt, and black pepper. Mix well and let marinate for at least 30 minutes.

    Prepare Skewers

    Soak wooden skewers in water for at least 15 minutes to prevent burning. Thread marinated meat onto skewers, alternating types of meat if desired.

Preparation of Vegetables

    Chop Vegetables

    Cut the bell peppers, red onion, and zucchini into chunks. Toss with olive oil, salt, and pepper.

    Prepare for Roasting

    Arrange the chopped vegetables on a baking sheet alongside the skewers.

Cooking

    Roast Vegetables

    Preheat the oven to 400°F (200°C). Roast the vegetables for about 20-25 minutes or until tender and slightly charred.

    Grill Skewers

    While the vegetables are roasting, heat a grill or grill pan over medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until cooked through.

Preparation of Tzatziki Sauce

    Make Tzatziki

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and black pepper. Mix well and refrigerate until serving.

Serving

    Plate the Dish

    Serve the grilled skewers on a platter alongside the roasted vegetables and a portion of rice or potatoes. Add a generous dollop of tzatziki sauce on the side.
