Roasted Veggies

Rice or Potatoes

Method

Prepare Gyro Meat

  1. 1

    Make the Mixture

In a large bowl, combine ground lamb, ground beef, finely chopped onion, minced garlic, dried oregano, ground cumin, salt, black pepper, cinnamon, and the egg. Mix well until all ingredients are thoroughly combined.

  2. 2

    Shape and Cook

Shape the meat mixture into a loaf shape and place it on a rotisserie or in a loaf pan. Cook in a preheated oven at 350°F (175°C) for approximately 60-75 minutes or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

Roast Veggies

  1. 3

    Prepare Vegetables

Slice the bell peppers, zucchini, and red onion into bite-sized pieces. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

  2. 4

    Roast

Spread the seasoned vegetables on a baking sheet and roast in a preheated oven at 425°F (220°C) for 20-25 minutes, stirring halfway through, until tender and slightly charred.

Cook Rice or Potatoes

  1. 5

    Cook Rice

In a medium saucepan, combine basmati rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked and water is absorbed.

  2. 6

    Cook Potatoes

In a separate pot, boil diced potatoes in salted water for 15-20 minutes, or until tender. Drain and set aside.

Make Tzatziki Sauce

  1. 7

    Combine Ingredients

In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, and salt until well combined. Refrigerate for at least 30 minutes to allow flavors to meld.
