Prepare the Shrimp Marinade
In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

Marinate the Shrimp
Add the shrimp to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Veggies
Preheat the oven to 400°F (200°C). In a large bowl, toss the diced bell peppers, sliced zucchini, and red onion with olive oil, salt, black pepper, and dried oregano until well coated.

Prepare the Tzatziki Sauce
In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and chopped fresh dill. Mix until smooth and refrigerate until serving.

Spread the prepared veggies on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes or until tender and slightly caramelized.

If using wooden skewers, ensure they are soaked in water for at least 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers.
