Pie Crust Preparation

    Make the Pie Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Avoid overworking the dough.

    Chill the Dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Shrimp

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.

    In a mixing bowl, combine cooked shrimp, feta cheese, cream cheese, lemon juice, fresh dill, and black pepper. Mix until well combined.

Assembling and Baking

    Preheat your oven to 375°F (190°C).

    On a floured surface, roll out the chilled dough into a circle that fits in a 9-inch pie dish.
