Preparing the Sausage

    Mixing Ingredients

    In a large mixing bowl, combine the ground pork and ground lamb. Add minced garlic, chopped oregano, orange zest, red wine, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Stuffing the Sausage

    Rinse the sausage casings in cold water and soak them in water for about 30 minutes. Once soaked, carefully stuff the casing with the sausage mixture, tying off the ends. Twist into links as desired.

    Chilling the Sausage

    Refrigerate the sausages for at least 1 hour to firm up before grilling.

Roasting Vegetables and Feta

    Preparing the Vegetables

    Preheat the grill or oven to medium-high heat. In a large bowl, toss the sliced bell peppers and red onion with olive oil, salt, and pepper.

    Spread the vegetables onto a grilling basket or a baking sheet. Add crumbled feta cheese on top. Roast on the grill or in the oven for about 15-20 minutes until the vegetables are tender and slightly charred.

Grilling the Sausage

    Preheat the grill to medium heat. Place the sausages on the grill and cook for about 10-12 minutes, turning occasionally until they are cooked through and have a nice char on the outside.
