Method

Kofta Preparation

1

Mix the Ingredients

In a large mixing bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper.

2

Form the Koftas

Using your hands, mix the ingredients thoroughly until well combined. Shape the mixture into small meatballs or oval patties, about the size of a golf ball.

3

Cook the Koftas

Heat olive oil in a skillet over medium heat. Add the koftas to the skillet and cook for about 8-10 minutes, turning occasionally, until they are browned and cooked through.

Tzatziki Preparation

4

Prepare the Cucumber

Grate the cucumber and place it in a clean cloth or paper towel. Squeeze out the excess moisture to avoid a watery tzatziki.

5

Mix the Tzatziki

In a separate bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well until all ingredients are incorporated.

6

Chill and Serve

Refrigerate the tzatziki for at least 30 minutes before serving to allow the flavors to meld. Serve alongside the koftas.
