Method

Prepare Lamb Chops

    Marinate the Lamb

    In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Mix well.

    Add Lamb Chops

    Add the lamb chops to the marinade and coat them evenly. Cover and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Prepare Roasted Veggies

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Chop Vegetables

    Wash and chop the bell peppers, zucchini, and red onion into bite-sized pieces.

    Season Veggies

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper until well coated.

    Roast Veggies

    Spread the seasoned vegetables on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.

Prepare Rice

    Rinse Rice

    Rinse basmati rice under cold water until the water runs clear to remove excess starch.

    Cook Rice

    In a pot, combine rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed and rice is tender.

Grill Lamb Chops

    Preheat Grill

    Preheat your grill to medium-high heat.

    Grill Lamb Chops

    Remove lamb chops from the marinade and place them on the grill. Grill for about 4-5 minutes per side for medium-rare, or until desired doneness.

    Rest Chops

    Once cooked, remove lamb chops from the grill and let them rest for 5 minutes before serving.
