Cooking the Rice

In a medium saucepan, bring 1 cup of water to a boil. Add the Arborio rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.

Cook the Mixture
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent sticking. Once boiling, reduce the heat to low and let it simmer for about 30 minutes, stirring occasionally.

Add Eggs
In a separate bowl, beat the 2 large eggs. Gradually temper the eggs by adding a small amount of the hot rice mixture to the eggs, whisking constantly. Once tempered, pour the egg mixture back into the saucepan, stirring continuously.

Thicken the Pudding
Continue to cook the pudding on low heat for an additional 10-15 minutes, or until it thickens to your desired consistency. Stir in 1 tsp of ground cinnamon.
