Clean the Octopus
Rinse the octopus under cold water thoroughly. Remove the beak and any internal organs if not already done by your fishmonger. If the octopus is large, consider cutting it into smaller pieces for easier grilling.

Prepare the Marinade
In a mixing bowl, combine the olive oil, juice of 1 lemon, minced garlic, sea salt, and black pepper. Whisk until well combined.

Marinate the Octopus
Place the cleaned octopus in a large ziplock bag or a shallow dish. Pour the marinade over the octopus, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for more flavor.

Grill the Octopus
Remove the octopus from the marinade, letting any excess drip off. Place the octopus on the grill and cook for about 3-4 minutes per side, or until nicely charred and cooked through. During the last minute of grilling, slice the second lemon in half and place it cut-side down on the grill to char.

Finish and Serve
Once grilled, remove the octopus from the grill and let it rest for a few minutes. Chop the octopus into bite-sized pieces. Squeeze the grilled lemon over the octopus and garnish with chopped fresh parsley before serving.
