Method
For the Fried Zucchini
- 1
Prepare the Zucchini
Wash the zucchinis thoroughly, then slice them into 1/4-inch thick rounds. Pat them dry with a paper towel to remove excess moisture.
- 2
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. In another bowl, whisk together the egg and milk until well combined. Gradually pour the egg mixture into the dry ingredients, stirring until a smooth batter forms.
- 3
Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.
- 4
Fry the Zucchini
Dip each zucchini slice into the batter, allowing any excess to drip off. Carefully place the battered zucchini into the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- 5
Drain and Serve
Once fried, remove the zucchini slices and place them on a plate lined with paper towels to absorb excess oil. Serve hot.
For the Tzatziki
- 6
Prepare the Cucumber
Grate the cucumber and place it in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to prevent the tzatziki from becoming watery.
- 7
- 8
Chill and Serve
Cover the tzatziki and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled alongside the fried zucchini.
