Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Let them soak for at least 8 hours or overnight.

    Make the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until a coarse mixture forms, scraping down the sides as needed.

    Add Flour

    Transfer the mixture to a bowl and stir in the flour until well combined. If the mixture is too wet, add a little more flour.

    Shape the Falafel

    Using your hands, form the mixture into small balls or patties, about 1-2 inches in diameter.

    Heat the Oil

    In a deep pan or pot, heat the vegetable oil over medium-high heat until hot but not smoking.

    Fry the Falafel

    Carefully add the falafel balls to the hot oil in batches, frying them for about 3-4 minutes on each side or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Mix the Sauce

    In a small bowl, whisk together the tahini, lemon juice, minced garlic, water, and salt until smooth. If the sauce is too thick, add a little more water to reach your desired consistency.
