Method

Grilled Chicken Skewers

    Marinate the Chicken

    In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breast cubes and marinate for at least 30 minutes.

    Prepare the Skewers

    Soak the skewers in water for 30 minutes. Thread marinated chicken onto skewers.

    Grill the Skewers

    Preheat the grill to medium-high heat. Grill the chicken skewers for 10-12 minutes, turning occasionally until fully cooked.

Gyro Meat

    Prepare the Meat Mixture

    In a food processor, combine ground lamb, ground beef, onion, minced garlic, oregano, salt, black pepper, and cinnamon. Process until well combined.

    Shape and Cook the Gyro Meat

    Shape the mixture into a loaf and place it on a baking sheet. Bake in a preheated oven at 180°C (350°F) for 45-50 minutes until cooked through.

Mini Spinach Pies

    Prepare the Filling

    Sauté chopped onion in olive oil until translucent. Add spinach and cook until wilted. Let cool, then mix in crumbled feta, beaten egg, salt, and black pepper.

    Assemble the Pies

    Lay out phyllo pastry sheets, brush with olive oil, and place a spoonful of the filling on one end. Fold and roll to enclose the filling.

    Bake the Pies

    Place the assembled pies on a baking sheet and bake in a preheated oven at 180°C (350°F) for 20-25 minutes until golden.

Rice Dolma

    Prepare the Filling

    Sauté chopped onion in olive oil until translucent. Add rice and cook for 2-3 minutes. Mix in parsley, lemon juice, salt, and black pepper.

    Wrap the Dolmas

    Lay grape leaves flat and place a spoonful of the rice mixture at the base. Roll the leaves tightly from the base up. Repeat for all leaves.

    Cook the Dolmas

    Place the wrapped dolmas in a pot, add water to cover, and simmer on low heat for about 30-40 minutes until rice is tender.

Roasted Veggies

    Prepare the Vegetables

    Chop bell peppers, zucchini, and red onion into bite-sized pieces. Toss with olive oil, salt, black pepper, and balsamic vinegar.

    Roast the Vegetables

    Spread the vegetables on a baking sheet and roast in a preheated oven at 200°C (400°F) for 25-30 minutes until tender and slightly caramelized.
