Method

Preparing the Sea Bass

  1. 1

    Season the Fillets

Pat the Chilean Sea Bass fillets dry with paper towels. Rub olive oil on both sides of the fillets, then sprinkle with salt and black pepper.

  2. 2

    Cook the Fish

Heat a large skillet over medium-high heat. Once hot, place the fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy and the fish is cooked halfway through.

  3. 3

    Flip the Fillets

Carefully flip the fillets and cook for another 4-5 minutes until fully cooked and flaky. Drizzle lemon juice over the fillets during the last minute of cooking.

Making the Herb Butter

  1. 4

    Prepare the Herb Butter

In a small bowl, mix the softened unsalted butter with chopped parsley, chopped dill, and minced garlic until well combined. Set aside.

Serving

  1. 5

    Plate the Dish

Once the fish is cooked, carefully transfer the fillets to serving plates. Top each fillet with a dollop of the prepared herb butter.

  2. 6

    Add Garnish

Garnish the plates with lemon wedges and fresh dill sprigs for an elegant presentation.
