Dry Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

  2. 2

    Combine Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking soda, baking powder, ground cinnamon, salt, and ground nutmeg until well combined.

Mixing Wet Ingredients

  1. 3

    Mix Wet Ingredients

In another bowl, combine the vegetable oil, eggs, and vanilla extract. Beat the mixture until it's well blended.

  2. 4

    Add Carrots and Pineapple

Stir in the grated carrots and crushed pineapple until evenly distributed.

Combining and Baking

  1. 5

    Combine Mixtures

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

  2. 6

    Add Walnuts

If using, fold in the chopped walnuts to the batter.

  3. 7

    Pour and Bake

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cooling and Serving

  1. 8

    Cool the Cakes

Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, turn the cakes out onto wire racks to cool completely.

  2. 9

    Serve

Once cooled, you can frost with cream cheese frosting or serve plain. Slice and enjoy your delicious carrot cake!
