Prepare the Phyllo Dough
Thaw the phyllo dough according to package instructions. Preheat your oven to 350°F (175°C).

Melt the Butter
In a saucepan, melt the unsalted butter over low heat. Set aside to cool slightly.
Filling

Mix the Filling
In a large bowl, combine the chopped walnuts, chopped almonds, ground cinnamon, and sugar. Mix until well combined.

Add the Filling
Spread a portion of the nut mixture evenly over the layered phyllo. Repeat the layering process with another 7-8 sheets of phyllo, brushing each with butter. Continue layering phyllo and filling until all ingredients are used, finishing with a top layer of phyllo (at least 8 layers).

Cut the Baklava
Using a sharp knife, cut the baklava into diamond or square shapes, cutting through to the bottom.

Bake the Baklava
Bake in the preheated oven for 45-50 minutes, or until golden brown and crisp.

Prepare the Syrup
While the baklava is baking, combine water, granulated sugar, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool.

Pour Syrup Over Baklava
Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to cool completely before serving.
