    Prepare the Bulgur

    In a bowl, soak the bulgur wheat in 2 cups of boiling water. Cover and let it sit for about 30 minutes, or until the bulgur is tender and the water is absorbed. Fluff with a fork.

    In a large mixing bowl, combine the chopped parsley, mint, diced tomatoes, cucumber, and red onion.

    In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.

    Add the soaked bulgur to the bowl with the vegetables. Pour the dressing over the salad and toss everything together until well combined.
