Falafel Preparation

Soak the Chickpeas

Place dried chickpeas in a bowl and cover with water. Soak for 8 hours or overnight.

Prepare the Falafel Mixture

Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper. Pulse until a coarse mixture forms.

Form the Falafel Balls

Transfer the mixture to a bowl and add flour. Mix well and form small balls or patties, about 1.5 inches in diameter.

Fry the Falafel

Heat vegetable oil in a deep skillet over medium-high heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
