    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour, salt, and olive oil. Gradually add water, mixing until a soft dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Shape the Bread

    After resting, divide the dough into 4 equal pieces. Roll each piece into a round flatbread shape, about ¼ inch thick.

    Cook the Bread

    Heat a griddle or a non-stick skillet over medium-high heat. Cook each flatbread for about 2-3 minutes on each side until golden brown and cooked through. Remove from the heat and set aside.

    Prepare the Topping

    In a bowl, mix the Shanklish cheese with chopped parsley, diced tomato, and red onion until well combined.

    Assemble the Shanklish Bread

    Spread the Shanklish mixture generously over each flatbread. Drizzle with olive oil and sprinkle with sumac if desired.
