Cooking Instructions

  1. 1

    Prepare the Sauce

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.

  2. 2

    Add Aromatics

Stir in the minced garlic and cook for an additional minute until fragrant.

  3. 3

    Mix in Tomatoes

Add the canned diced tomatoes, tomato paste, ground cumin, paprika, chili powder, salt, and black pepper. Stir well to combine.

  4. 4

    Simmer the Sauce

Reduce the heat and let the sauce simmer for about 10-15 minutes, until slightly thickened.

  5. 5

    Poach the Eggs

Make small wells in the sauce and crack the eggs into the wells. Cover the skillet and cook for 6-8 minutes, or until the eggs are set to your liking.

  6. 6

    Garnish and Serve

Remove from heat, sprinkle with chopped parsley and feta cheese (if using). Serve hot with bread.
