Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.

Add Aromatics
Stir in the minced garlic and cook for an additional minute until fragrant.

Mix in Tomatoes
Add the canned diced tomatoes, tomato paste, ground cumin, paprika, chili powder, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Reduce the heat and let the sauce simmer for about 10-15 minutes, until slightly thickened.

Garnish and Serve
Remove from heat, sprinkle with chopped parsley and feta cheese (if using). Serve hot with bread.
