Pastry Dough Preparation

1. Make the Dough

In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Wrap in plastic and refrigerate for at least 30 minutes.

Filling Preparation

2. Prepare Cheese Filling

In a bowl, mix the feta and mozzarella cheese, parsley, and black pepper until well combined.

3. Prepare Meat Filling

In a skillet, heat olive oil over medium heat. Sauté the onion and garlic until translucent. Add the ground beef or lamb, cumin, cinnamon, salt, and black pepper. Cook until the meat is browned. Remove from heat and let cool.

Assembling and Baking

4. Assemble Sambousek

Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles (about 4 inches in diameter). Place a spoonful of filling in the center, fold over, and crimp the edges to seal.

5. Bake

Preheat oven to 375°F (190°C). Place sambousek on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle with sesame seeds. Bake for 25-30 minutes or until golden brown.
