    Activate the Yeast

    In a small bowl, combine warm water (about 110°F/43°C), sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Prepare the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, until doubled in size.

    Shape the Pitas

    Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball and roll out into circles about 1/4 inch thick.

    Preheat the Oven

    Preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.

    Bake the Pitas

    Carefully place the rolled-out pita rounds onto the hot baking stone or sheet. Bake for about 2-3 minutes until they puff up and are lightly golden.

    Cool and Serve

    Remove the pitas from the oven and let them cool on a wire rack. Serve warm or at room temperature.
