Prepare the Dough
In a large bowl, mix the flour, semolina, powdered sugar, and baking powder. Melt the butter and mix it into the dry ingredients until crumbly. Add water and rosewater, and knead until the dough is smooth.

Prepare the Filling
In a food processor, blend the pitted dates, ground cinnamon, and chopped walnuts until a smooth paste forms. If too thick, add a little water to achieve the right consistency.

Form the Maamoul
Take a small ball of dough (about the size of a walnut), flatten it in your palm, and place a teaspoon of the date filling in the center. Fold the dough over the filling and seal it, then shape it into a ball or press it into a maamoul mold.

Bake
Preheat the oven to 350°F (175°C). Place the shaped maamoul on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until lightly golden.

Cool and Serve
Allow the maamoul to cool on a wire rack. Dust with powdered sugar before serving.
