    Sear the Lamb Shanks

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the lamb shanks with salt and black pepper, then sear them in the hot oil until browned on all sides, about 8-10 minutes. Remove the shanks and set aside.

    Sauté the Aromatics

    In the same pot, add chopped onion, minced garlic, diced carrots, and chopped celery. Sauté until the vegetables are softened, about 5 minutes.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to simmer for about 2-3 minutes.

    Add Liquid and Herbs

    Return the lamb shanks to the pot, add beef stock, and toss in the rosemary sprigs. Bring to a boil.

    Braised Cook

    Cover the pot and reduce the heat to low. Let it simmer for about 2 hours or until the lamb is tender and falling off the bone.

    Serve

    Remove the shanks from the pot and serve them hot with your choice of two appetizers or salads.
