    Prepare the Bulgur

    Rinse the bulgur wheat under cold water and then soak it in 1.5 cups of water for about 30 minutes until softened. Drain excess water.

    Make the Filling

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the ground meat, pine nuts, cinnamon, allspice, salt, and pepper. Cook until the meat is browned. Stir in chopped parsley and remove from heat.

    Combine Ingredients

    In a large bowl, combine the soaked bulgur, the meat mixture, and another tablespoon of olive oil. Mix well until all ingredients are thoroughly combined.

    Shape the Kebbeh

    Wet your hands with water to prevent sticking. Take a small amount of the mixture and shape it into a ball or oval, making a small indentation in the center.

    Freeze the Kebbeh

    Place the shaped kebbeh balls on a baking sheet lined with parchment paper and freeze until solid, about 1-2 hours. Once frozen, transfer to a zip-top bag for storage.
