Prepare the Dough
In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy. Add olive oil and salt.

Mix the Ingredients
Gradually add the flour to the yeast mixture, stirring until a soft dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and allow it to rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
In a bowl, mix the cream cheese with the strawberry, fig, and apricot jams until well combined.

Shape the Ka'ak
Preheat your oven to 375°F (190°C). Punch down the dough and divide it into small balls (about the size of a golf ball). Flatten each ball, place a spoonful of the cheese and jam mixture in the center, and fold the dough around the filling, sealing it well.

Add Toppings and Bake
Sprinkle sesame seeds on top of each stuffed dough ball. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.

Cool and Serve
Allow the ka'ak to cool slightly before serving. Enjoy warm or at room temperature.
