Method

Preparing the Hummus

  1. 1

    Blend the Ingredients

In a food processor, combine the canned chickpeas, tahini, garlic, lemon juice, olive oil, ground cumin, salt, and water. Blend until smooth and creamy.

  2. 2

    Adjust the Consistency

If the hummus is too thick, add more water, one tablespoon at a time, until the desired consistency is reached.

  3. 3

    Serve

Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle paprika on top.

Making the Awarma

  1. 4

    Melt the Lamb Fat

In a medium saucepan, melt the lamb fat over medium heat until it becomes liquid.

  2. 5

    Cook the Onions and Garlic

Add the chopped onions and minced garlic to the saucepan. Sauté until the onions become translucent.

  3. 6

    Season the Mixture

Add salt and ground black pepper, stirring well to combine. Allow to simmer for about 15 minutes.

  4. 7

    Cool and Store

Remove from heat and let it cool. Awarma can be stored in the refrigerator for a few weeks.
