Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into sticks, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato sticks in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add the potato sticks to the hot oil in batches, frying them until golden brown and crispy, about 5-7 minutes per batch.

Season the Fries
Remove the fries from the oil and drain on paper towels. While still hot, season with salt, black pepper, garlic powder, and paprika to taste.

Serve
Serve immediately while hot, with your favorite dipping sauce.
