    Soak the Chickpeas

    Rinse and soak the dried chickpeas in water overnight. This will help them soften and make them easier to blend.

    Prepare the Mixture

    In a food processor, combine the soaked chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Blend until you have a coarse mixture, scraping down the sides as needed.

    Form the Patties

    Transfer the mixture to a bowl. Add lemon juice and water, and mix well. Shape the mixture into small patties or balls, about 1-2 inches in diameter.

    Heat the Oil

    In a deep frying pan, heat the olive oil over medium heat. Ensure there is enough oil to submerge the patties halfway.

    Fry the Falafel

    Once the oil is hot, carefully add the patties in batches, frying until they are golden brown and crispy on all sides, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve hot as a side dish or with your favorite dipping sauce.
