Falafel Preparation

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas. Allow them to dry slightly on a paper towel.

    Blend the Ingredients

    In a food processor, combine the chickpeas, parsley, cilantro, garlic, onion, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is finely chopped but not pureed.

    Add Flour

    Transfer the mixture to a bowl, sprinkle in the flour, and mix until well combined. If the mixture is too wet, add a little more flour.

    Chill the Mixture

    Cover the bowl and refrigerate the mixture for at least 30 minutes to help it firm up.

    Shape the Falafel

    After chilling, shape the mixture into small patties or balls, about the size of a golf ball.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

    Fry the Falafel

    Carefully place the falafel patties in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes per side.

    Drain and Serve

    Remove the fried falafel from the oil and drain on paper towels. Serve immediately with your choice of appetizers or salads.
