Prepare the Dough
In a large bowl, dissolve the sugar in warm water and sprinkle the yeast on top. Let it sit for 5-10 minutes until frothy. Add the olive oil, salt, and flour gradually, mixing until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling
While the dough is rising, chop the Sojok into small pieces. In a bowl, combine the Sojok, mozzarella, and feta cheese.

Shape the Bread
Once the dough has risen, punch it down and divide it into 2 equal portions. Roll out each portion into a rectangle about 1/2 inch thick. Place half of the filling mixture along one edge, then roll the dough tightly to enclose the filling. Pinch the ends to seal.

Second Rise
Place the rolled bread seam side down on a baking sheet lined with parchment paper. Cover with a cloth and let it rise for another 30 minutes.

Bake the Bread
Preheat the oven to 375°F (190°C). Bake the bread for 25-30 minutes or until golden brown. Allow to cool slightly before slicing.
